Fanciful Fruit Pasta Salad
1 Lb Fanciful Fruit pasta
2 cups chicken, cooked and diced
1 1/2 cups red and green seedless grapes, halved
1/2 cup green onion, sliced
2 cups oranges, peeled and sectioned
1/2 cup golden raisins
1/4 cup chopped pecans, roasted
Vinaigrette
1/2 cup orange juice
4 Tbsp 16 year balsamic vinegar
1/2 cup blood orange olive oil
Sea salt
Fresh ground pepper
Instructions: Cook pasta in large pot of boiling, salted water until al dente. Drain and rinse with cold water. Drizzle with 1 tablespoon blood orange olive oil and mix. Place in large bowl. Add next 5 ingredients. Toss salad well.
For Vinaigrette:
Whisk together orange juice, balsamic vinegar, salt and pepper. Slowly whisk in olive oil. Drizzle over salad and mix well. Place into lettuce-lined serving bowl and top with pecan pieces.
Makes 8-10 servings.
