Savoré Tomato Basil Tart with Goat Cheese

Ingredients:
Crust
  • 1¼ cup flour
  • 7 Tablespoons butter, cold
  • 2 Tablespoons White Balsamic Vinegar
  • 2-3 Tablespoons cold water
Filling
  • ½ cup leek, white part, thinly sliced
  • 7 oz. goat cheese
  • 2 eggs, beaten
  • ½ cup heavy cream
  • ¼ cup basil, chopped
  • 2 Tablespoons Basil Olive Oil
  • 4 tomato, sliced 1/8” thick
  • 2 cloves garlic, minced
  • Basil for garnish
Instructions:
Crust
Cut butter into flour. Add vinegar and water, and mix well. Form dough into a round disk and refrigerate 1 hour. Roll out crust and place in tart pan. Cover and refrigerate while you make the filling.
Filling
With mixer blend goat cheese, egg, and cream. Add salt and pepper. Stir in leeks and pour into shell.
In Basil Olive Oil, sauté garlic and tomato slices briefly. Place on top of filling. Top with chopped basil and drizzle with Basil Olive Oil. Bake at 375 degrees 20-25 minutes.
